Cheese and courgette muffins

We love these savoury muffins as they are so delicious, and they are a great way to get a tot to eat vegetables.


  • 1 small courgette
  • 100g grated cheddar cheese
  • 225g cup self-raising flour (or 225g plain flour with 3 tsb baking powder)
  • 50ml olive oil
  • 175ml full fat milk
  • 1 egg
  • 1 tsp cayenne pepper
  • 1 tsb chia seeds
  • 1 tsb linseeds


  1. Preheat the oven to 200°C/180°C fan oven/gas mark 6.
  2. Place the muffin cases in a muffin tin.
  3. Rinse the courgette and cut the ends off, before grating it into a mixing bowl.
  4. Add grated cheese into the grated courgette.
  5. Mix all the dry ingredients together into the grated cheese and courgette.
  6. Mix all the wet ingredients separately in a different bowl.
  7. Stir everything together until all the ingredients are combined, but don’t overmix.
  8. Divide the mixture equally between the muffin cases using two spoons.
  9. Put in the oven to bake for around 20 minutes until they’re golden and piping hot throughout.
  10. Cool on a cooling rack.
