Cheese and courgette muffins
We love these savoury muffins as they are so delicious, and they are a great way to get a tot to eat vegetables.
Ingredients
- 1 small courgette
- 100g grated cheddar cheese
- 225g cup self-raising flour (or 225g plain flour with 3 tsb baking powder)
- 50ml olive oil
- 175ml full fat milk
- 1 egg
- 1 tsp cayenne pepper
- 1 tsb chia seeds
- 1 tsb linseeds
Method
- Preheat the oven to 200°C/180°C fan oven/gas mark 6.
- Place the muffin cases in a muffin tin.
- Rinse the courgette and cut the ends off, before grating it into a mixing bowl.
- Add grated cheese into the grated courgette.
- Mix all the dry ingredients together into the grated cheese and courgette.
- Mix all the wet ingredients separately in a different bowl.
- Stir everything together until all the ingredients are combined, but don’t overmix.
- Divide the mixture equally between the muffin cases using two spoons.
- Put in the oven to bake for around 20 minutes until they’re golden and piping hot throughout.
- Cool on a cooling rack.
