Quick hummus

This is a classic party snack. You can make a big batch and save some to make hummus crackers.

Ingredients

  • 1 can chickpeas or 1 ½ cups cooked chickpeas
  • ¼ cup fresh lemon juice (1 large lemon)
  • ¼ cup (60 ml) well-stirred tahini
  • 3 garlic clove, minced
  • 2 or 3 tablespoons extra-virgin olive oil, plus more for serving
  • ½ teaspoon ground cumin
  • Salt to taste
  • 2 to 3 tablespoons water
  • Pinch of ground caynne pepper, paprika and/or sumac

Method

  1. In a food process blitz the chickpeas.
  2. Add all the other ingredients to the food processor.
  3. Taste - add more of each of the ingredients if needed. Remember to taste after adding each of the ingredients.
